We all know that a ‘hanger’ mum is more likely to snap. We also know that a breakfast needs to be high in energy to get us through the morning. A super easy Bircher Muesli is going to stop you being a ‘hanger’ mum and provide you with energy to get through the day.
I love Bircher Muesli recipe because you can pre-make it on a Sunday. You then have a large batch for several mornings of the week. You can even prepare it in the small jar if you need to take it with you to work or on the run with kids.
The base is made of just oats, grated apple, and juice or coconut water. Then the next morning I add yoghurt, fruit, nuts, and seeds.
Preparation & cooking time – 10 minutes
Serves – 2
Ingredients for Bircher Muesli
1 cup Oats
A grated apple
1 cup Coconut water or juice
Yoghurt
Fruit
Nuts & Seeds
Instructions for Bircher Muesli
Mix oats, grated apple, and liquid together cover and refrigerate overnight to soak.
Remove from the fridge the next day and add yoghurt, your favourite fruit, nuts, and seeds.
You can make double the recipe and store in the fridge for up to three days.
